Grilled Halloumi & Honey Lollipops
Squeaky grilled halloumi meets a sticky harissa-honey glaze, finished with pomegranate seeds and fresh mint — these "lollipops" are a punchy vegetarian option for the barbecue that come together in under 20 minutes. Great as a starter or a shareable side.

Set up your barbecue for direct cooking over the grill until nice and hot.

Cut each block of halloumi into six equal-sized pieces. Push a skewer into the base of each piece — this doubles as a lollipop stick and helps hold the cheese together while it grills.

Combine the harissa, oil, honey or maple syrup, oregano and paprika in a small bowl to make the glaze.

Gently place the halloumi onto the hot grill and cook for 2–3 minutes each side. Only turn once you've achieved a nice grill mark, then generously brush each side with the sticky harissa glaze while it continues cooking.

Before serving, sprinkle over the pomegranate seeds and fresh mint, then finish with a final drizzle of honey or syrup.

Tip: Try serving with some homemade tzatziki on the side.
