Asian Chicken Drumsticks

Greta for a BBQ or just a quick meal in the evening. Leave to marinade till the next day for an even greater infusion.

Asian Chicken Drumsticks

Method

    Pre-heat your oven to 180 degrees.

    Pour some baking powder, salt and pepper into a bowl.

  3. 3

    Bake your chicken drumsticks and coat them in baking powder.

    Place the chicken drumsticks on an oven tray, then put them in the oven for 50 minutes, or until golden brown and crispy.

    Whilst waiting, pit and cut your avocados. Finely chop up your bunch of coriander and your spring onions. Whack all these into a bowl and smash. Half a lime and squeeze all the juices into the bowl, mixing again.

    When the chicken is done, in a wok or a large saucepan add all the grated ginger, garlic cloves, and a splash of olive oil. Cook until softened.

    Add your sweet chilli sauce, light soy sauce, dark soy sauce and cook until the sauce is sticky.

    Add your cooked drumsticks and toss!

    Serve the drumsticks with the guac on the side
