Cook the pasta to the packaging specification, when cooked add your pesto and cook for a minute.
While you wait for the pasta, season the chicken with the BBQ Seasoning
Heat a teaspoon of olive oil in a medium skillet over medium heat, place chicken breasts in and cook until edges are opaque, about 10 minutes. Flip to the other side, then cover the pan, lower the heat and cook for another 10 minutes or until the chicken is piping hot.
Leave both to cool.
Prep your salad bowl, layer the bottom with your salad leaves.
Chop up your sun dried tomatoes and layer them.
Chop your mozzarella into small chunks and layer them.
When the pasta is cool add this on top.
Cut your cold chicken into chunks and add them on top.
If you want to add some extra flavour you could always add some salad dressing.
