Chicken & gnocchi in a tomato sauce with homemade pesto

Ingredients

Put the grill on high and boil the kettle.

In a large pan add the gnocci and boiling water and cook for 2 minutes. (keep the water) Once cooked put the gnocci under the grill. Keep and eye on them turning regulary until a bit crispy on the outside.

Heat a small frying pan over a low heat. Cook the pine nuts until golden, shaking occasionally. Put into a food processor with the basil, parmesan, olive oil and 2 garlic cloves. Process until smooth and season.

Heat some oil in a hot pan and add the chicken and cayenne pepper so its covered. Cook for 8 minutes our until golden and cooked thoroughly.

Add the tomatoes to the frying pan with a drizzle of olive oil. As the tomatoes soften, roughly crush them with your spoon. Grate the last garlic clove into the pan and the chilli, rest of the red wine vinegar and season.

Take a ladle of gnocchi water and add it to the pan and mix together. Add your gnocchi and stir thoroughly.

07.

Pour some of your pesto over the top of the gnocchi when serving.
