Chicken Sag Aloo

Ingredients

In a large pan boil a pan of salty water and boil the potatoes for 12 minutes, once cooked drain and put aside.

Put a large frying pan on a high heat and add the coconut oil, once melted add the spring onion, ginger and garlic and fry for 1 minute, keep stirring.

Add the potatoes and garam masala to the mixture, fry for 45 seconds, ensuring it doesn’t stick.

04.

Add the chicken, 3 tbsp of water and season well and cook for 4 minutes. When the chicken is cooked thoroughly, add the spinach and cook until wilted, then add the coriander. Finish with some lemon juice in the mixture.
