Classic Scones

Quintessentially British, these scones served with jam and clotted cream are exquisite.

Method

    Heat oven to 220c/fan 200c/gas 7

    Sieve the flour in to a large bowl with the salt and baking powder, mix well.

    Add the butter, run with your fingers until it looks like fine crumbs and add the sugar.

    Microwave the milk for 30 seconds, then add a squeeze of lemon and vanilla extract. Set aside.

    Put a lined baking sheet in the oven.

    In the dry mix, make a well then add the liquid quickly and mix with a cutlery knife.

    On a clean and dry work surface, scatter some flour and drop the dough. Cover your hands and the dough in more flour and turn over 3 times until smooth. Pat to around 4cm think.

    Take a 5cm cutter and push into the dough to make 4 scones. Mould the dough back together and make another 4.

    Put onto the baking tray and brush with the egg. Bake for 10 mins, serve with the cream and jam.
