Crispy Chicken Chow Mein

Ingredients

In a bowl add 1 tablespoon cornflour with 5 table spoons of soy sauce, mix until combined. Add your oyster sauce, vinegar and sugar. Mix until smooth and set aside.

In another bowl crack the eggs and season well then whisk together. Add the rest of the cornflour to another bowl.

Dip the chicken into the egg and then the flour and put onto a plate.

In a hot wok add some oil and fry for 5 minutes until starting to brown remove and place on a clean plate.

Add another splash of oil to the pan and put back on the heat. Once very hot add the chilli, garlic and ginger. Fry for 1 minute then add the peppers, mangetout, carrots and spring onions and cook for 4 minutes.

Add back the chicken and the sauce and cook for 2 minutes. Then add the noodles. Cook for another 3 minutes or until everything is cooked through then serve with a splash of soy sauce and some prawn crackers.
