Crispy salmon, sweet and sour leeks served with crispy potatoes

This quick dish blends the flavours of sweet and sour ingredients to make a beautiful dish.

Method

    Preheat the oven to 220c

    Add some oil to a baking tray and put in the oven for 2 minutes. Remove and add the potatoes return to the oven for 30 minutes.

    While the potatoes cook heat 1 tbsp of oil in a frying pan on a medium heat, add the leeks for 10 minutes or until soft.

    Add the sugar and vinegar and cook until sweet and sticky, around 5 minutes. Then set aside.

    In a new frying pan add 1tbsp oil and heat until smoking hot. Add the salmon skin side down and cook for 4 minutes, turn and cook for another 4 minutes. remove and keep warm in some tinfoil.

    Boil a kettle of water, put the kale in a colander and pour over the boiling water.

    In the salmon frying pan add 1 tbsp oil and turn to a medium heat, stir fry the wilted kale for 2 minutes. Add a good squeeze of lemon juice and season well.

    Mix in the leeks and heat.

    Serve the salmon on a bed of kale and leeks with the potatoes on the side
