Ninja Woodfire Smoked Pulled Pork

If possible do this 24hrs before, mix the mustard, brown sugar, cayenne pepper, garlic powder, onion powder, celery salt and pepper in a bowl and rub the pork with the seasoning, and put in the fridge.

When ready to cook, add the smoking chips to the Woodfire, turn to the smoker setting and place the pork inside the Woodfire. I do 1hr and 15 minutes per 450g @ 120c.

When the internal temperature reaches 79c remove into a aluminium tray if you have one or make a basket with tin foil add the apple juice and vinegar and cover. Put back in the smoker.

Leave to cook until the meat is fork tender and internal temp is around 95c. Remove it from the Ninja Woodfire and wrap in tin foil and rest for an hour or more. When opening the tin foil save the juices and either smother the rolls with it for flavour. Serve with rolls, coleslaw, sweet potato fries, grilled peppers and salad.

***Note, If you want to crisp it up, heat a frying pan really hot, add the pork and a little bit of sugar and/or bbq sauce and the juices from the tinfoil.
