Lamb Flat Bread with feta & herbs

Method

    Put grill on high power. In a large pan heat 1 tbsp olive oil, add the mince, salt, pepper, cumin seeds and paprika. Heat for 1 minute then add the walnuts, rosemary and cook until golden.

    Put the spring onions, pepper, lettuce, tomato, coriander and dill in a food processor, then tip onto a plate. Cover with 1 tbsp of olive oil and the red wine vinegar and toss.

    Add the garlic, tomato puree and lemon juice to the lamb pan. Cook for 2 mins.

    Lay the tortillas over baking trays and spread the lamb mixture evenly. Top with some feta and put under the grill for 2 minutes.

    On the tortilla add some salad, cucumber and houmous and serve.
