Turn your grill to high. On a medium heat fry the chorizo in a large pan. Add your peppers after a minute, stirring them and allowing them to fry in the chorizo fat.

In a baking tray, cover your gnocchi with 1 tbsp olive oil and chunks of butter if you have it put under the grill for 10 minutes turning regularly.

After the chorizo has fried for about 2 mins, add your cherry tomatoes whole. After about 5 mins add the red chilli and garlic.

Meanwhile, pour the red wine vinegar into the frying pan and stir it in with the mascarpone. Add a pinch of salt and pepper to taste. Throw the basil in there too.

Drain your gnocchi and thoroughly mix it in to your sauce. Serve up with a sprinkling of parmesan and more fresh basil.
