Method

    On a medium heat fry the chorizo in a large pan. add your peppers after a minute, stirring them and allowing them to fry in the chorizo fat.

    After about 2 mins, add your cherry tomatoes whole. After about 5 mins add the red chilli and garlic.

    In a separate pan, cover your gnocchi with boiling water and allow it to soak for 10 minutes.

    Meanwhile, pour the red wine vinegar into the frying pan and stir it in with the mascarpone. Add a pinch of salt and pepper to taste. Throw the basil in there too.

    Drain your gnocchi and thoroughly mix it in to your sauce. Serve up with a sprinkling of parmesan and more fresh basil.
