Pan Seared Sea Bass with Rice and Pepper MedleyMediterranean style sea bass recipe, this simple dish is perfect for those summer afternoons. Easy to cook but filled with so much flavour.

20 minutes before cooking remove the fish from the fridge, sprinkle with some salt on both sides.
Combine all the spices in a bowl and set aside.
In a pan heat 2 tbsp oil until hot, add the peppers, shallots and garlic. Season with some salt and 1tsp of the spice mixture. Cook for 4 minutes and turn the heat to low.
Pat the fish dry and season with the remaining spice mixture on both sides. In a cast iron pan heat 6 tbsp of oil until very hot. Put the fish in skin side down and cook for 3 minutes, splashing oil over the top of the fish. Turn the fish over for 2 minutes and put the rice in the microwave.
Serve the fish on the vegetable medley and the rice on the side. Squeeze over the lemon juice. Done!
