Pesto Chicken with mash and greens
This meal will bring summer back into winter. The easy meal will help return those great memories of warmth.Ingredients

Boil a pan of water and add the potatoes with some seasoning.

Heat the oil in a non-stick frying pan. Put the kettle on.

Add the chicken and fry on one side for 6 minutes. Turn the chicken and cook on the other side for 6 minutes, cooking until the chicken is cooked through. Season all over with a little salt and pepper.

Throw the tomatoes into the pan, stirring them around for a couple of minutes until they start to soften.

Cook the broccoli for 5 minutes.

Reduce the heat of the chicken and stir in the pesto and crème fraiche until it makes a sauce.

Mash the potatoes with some milk and cheese to make a smooth mash.
08.
Scatter the chicken with a few basil leaves, then serve with the mash and broccoli.
