Pork and Bean Cassoulet with Mash Potato

Pork and Bean Cassoulet with Mash Potato

Method

    Heat large pan with boiling salted water and add the potatoes. Boil for 25 mins or until soft.

    Heat a large frying pan till hot. Add half the butter and oil then cook the sausages until browned all sides, once done set aside.

    In a separate pan add the white wine with the cream. Heat and add the rosemary and thyme and bring to a low boil.

    In the same pan add the vegetables and beans and cook for around 6 minutes. Finish by adding the rest of the butter, parsley and red wine vinegar and season well.

    For the sauce, pour the cider, stock and Worcestershire sauce into a small pan and simmer for 5 minutes.

    Serve with the mashed potatoes on the bottom, topped with a lade of the bean mixture, place the sausages on top with some sauce to follow
