Salmon Parcels with Cayenne Potatoes

Ingredients

Lay 2 large squares of tin foil out, inside each one, put a salmon fillet, large knob butter, slice of lemon, sprig of dill and a pinch of sea salt. Wrap up each one like a parcel and put into a baking dish, put to the side

Put the potatoes into a pan with salted boiling water for 15-20 mins, or until tender.

While the potatoes cook. Turn the oven to 200c/180c fan, heat the milk in a large pan till just before boiling and put aside

In another large pan, put the 30g butter over a low heat and melt. Then add the flour and mustard powder and cook for 1min constantly stirring. Now slowly add the warmed milk while constantly stirring. Add the smoked paprika and cayenne. Cook for 10 mins until a smooth sauce. Add 3/4 of the cheddar. Season to taste, you may want more cayenne to spice it up.

Once the potatoes are cooked then put them in a baking dish and carefully squash them with a fork till they pop a bit. Pour over the sauce and top with the remaining cheddar. Place the potatoes and the salmon in the oven for 20mins or until the salmon is cooked through and the cheese is golden and bubbling.

3 mins before the end of cooking put the peas and green beans in boiling water. Once cooked, drain and put them back in the pan with a knob of butter and melt. Serve everything together
