Shepard's pie jacket potatoes
The simple meal is perfect for a quick but filling meal. Can be made into a dinner by adding some greens but great for a snack or taken into work for lunch.Ingredients

Pierce your baking potatoes and put in the microwave for 15 minutes turning halfway.

Preheat your over to 200c.

Put the potatoes in the over for 15 minutes. Meanwhile add some oil to a frying pan and add the onions until tender. Turn up the heat and add the mince. Fry until browned and cooked.

Add to the onions the stock, Worcestershire sauce, tomato purée and season. Bring to the boil and then simmer for 15 minutes until the sauce is thick.

When the potatoes are crispy remove them and carefully as they are very hot cut in half and remove the insides without breaking the skin. Mash the potato with some milk, butter and seasoning.

Divide the mince between the potato halves, cover with mash then cheese and bake for 15 minutes until the cheese is golden.
