Spanish Pork Meatballs with Peppers and Butter Bean Stew

This one-pot wonder will keep you happy throughout the winter months.

Ingredients

01.

Season the pork mince, mix into the mince, then shape into small meatballs.

In a large pan, heat the oil and add the meatballs, cook for 5 mins or until golden brown all over then add the onion and peppers.

Cook for a further 5 mins, stirring now and then, until the veg has softened, then stir in the garlic and paprika, cayenne pepper and season well.

Stir the ingredients around in the pan for 1 min, then add the tomatoes. Cover with a lid and simmer for 10 mins.

05.

Stir in the beans, the sugar and some seasoning and leave uncovered, simmer for a further 10 mins.

06.

Just before serving, stir in the parsley.
