Add the bacon to a hot frying pan and cook until crispy.

Add your cherry tomatoes. Then turn your grill on to high and put a full kettle of water on.

Cook until the tomatoes start to burst, then add the garlic and fry for a minute. Season with salt and pepper.

Put your gnocchi in a baking dish and cover with boiling water for 2 minutes (or however your instructions say)

Add your spinach and basil leaves to the tomatoes. Once they have wilted, mix everything together.

While the sauce is thickening, drain your gnocchi back into the baking dish and put under the grill to crisp up for about 4 minutes, turning frequently.

Once the sauce has thickened remove from the heat and pour over the gnocchi mixing well.

Now tear the mozzarella over the top and cover the whole dish with grated Parmesan, season with pepper and a drizzle of olive oil, and then place under the grill for 15 minutes or until the cheese is golden and bubbling.
