Put a large saucepan of water with a pinch of salt on boil for the noodles.

In a large mixing bowl, add the garlic, ginger, soy sauce and chilli sauce. Mix together with the steak strips. Leave on the side.

Put the noodles on boil and cook to packet specs. Once cooked drain and add to the pan which you should now fill with cold water.

In a large wok add some oil to a medium heat. Fry the steak (save the marinade in the bowl) for around 3 mins until browned on the outside and no longer pink in the middle. Remove into a clean bowl with the juice from the pan.

In the frying pan add some more oil, put in the pepper, carrot and season. Stir fry for 6 mins add the remaining marinade and half the spring onions cook for 2 mins.

Put back the steak, juices and sesame seeds. Cook for 2 mins.

Drain the noodles and add them to the frying pan, add the sweet soy sauce. Cook until the noodles are piping hot.

Serve with the remaining spring onions.
