Tiger Bread

Mix the flour, yeast, sugar and salt in a bowl. Using your fingers rub in the butter until a crumb mixture forms. Mix in the warm water with a cutlery knife.

Tip the dough onto a floured surface and knead for 10 minutes.

Put the dough in a slightly greased mixing bowl and cover with a clean dry tea towel and leave to rise for around 2 hours or until doubled.

Lightly punch the dough to knock back then gently knead just 5 times. Keep patting until a smooth dough oval dough forms. And put on a baking sheet. Cover again with the tea towel and leave to double in size again, around an hour. Pre heat the oven to 200c/fan 180c/gas 6.

Whisk all the toppings together until smooth and leave to rest for 10 mins.

Spread the paste over the dough. Bake for 35 mins or until golden and cracked on top. Carefully tip over and tap the bottom to make sure its hollow. Cool on a wire rack.
