Turkey and Chickpea Pittas

This 15 minute meal is great for dinner or a work lunch snack.

Turkey and Chickpea Pittas

Method

    Boil a large saucepan to the boil and put in the chickpeas. Boil for 5 minutes then drain.

    In another pan on a high heat add the coconut oil. Once melted add the garlic and onions and cook for a minute.

    Now add the turkey mince and cook for 2 mins.

    Sprinkle in the cumin and paprika. Cook for 30 seconds or until the turkey mince is cooked thoroughly and season.

    Now still in the carrot, chilli and chickpeas, crushing the chickpeas as you stir.

    Once everything is cooked stir in the coriander and the lemon. Now shove into your pittas and eat.
